Skirt Steak Nachos – Super Bowl Party on the Grill

Wild Card weekend is here, which means the Super Bowl is coming. Winter football makes every weekend an occasion to gather, celebrate, and enjoy great food with friends and family. To help elevate your game-day spread, we’re kicking off our Super Bowl Party on the Grill series with a crowd-pleaser: Skirt Steak Nachos.

This recipe transforms a classic appetizer into a grilled masterpiece. Every step, from searing the steak to charring the jalapeños, tomatoes, and onions, happens over an open flame. The result? A harmony of smoky, bold flavors makes these nachos far more than a snack. Even the cheese is melted to gooey perfection on the grill using indirect heat, ensuring a rich, satisfying finish.

Serves 2-4

Skirt Steak Nachos Ingredients

  • 2 aluminum pie pans or another shallow grill-friendly dish
  • nachos, 3/4 large bag
  • 1lb skirt steak (or more)
  • 16 oz cheese- grated- I used a package of shredded "Mexican" cheese
  • 1 can of seasoned black beans
  • 2 jalapenos
  • cilantro
  • tomatoes and onions for the grill
  • arugula
  • salsa
  • sour cream
  • hot sauce

Skirt Steak Nachos Directions

  1. Drizzle the skirt steak in olive oil and add lots of salt and pepper. Grill the skirt steak on direct heat for no more than 8 minutes. You do not want to overcook it.
  2. At the same time, grill your jalapenos, tomatoes, and onion slices. Add the beans to a grill-safe pot or pan and cook on the grill.
  3. By this time, you may have already removed the meat from the grill. If not, remove it, tent it with foil, and let it rest until everything else is ready.
  4. Use two aluminum pie pans or another grill-friendly shallow dish (doubled-up aluminum foil could be used in a pinch) and spray them with non-stick spray. Add your chips and divide the cheese between the two plates. The more cheese, the better.
  5. Put the nacho dish on the grill on indirect heat and let it cook until all the cheese has melted (8-10 minutes approx.).
  6. Pull veggies, nachos, and beans off the grill. Chop the veggies and skirt steak and put them on the nachos. Next, smother them in the beans and add chopped cilantro.
  7. Add all your favorite toppings!
